Dumoulin prepares for major ProSweets equipment event showcase

Having gained decades of experience in the confectionery equipment sector, Dumoulin has continued to export its lines around the world, and is keenly anticipating playing its part at ProSweets in Cologne.
The company will be joining well over 200 businesses taking part in the show as exhibitors for this year’s event alongside ISM, which has a total of 1,500 companies showcasing their offerings between 2-5 February at the Koelnmesse site in Germany.
As Dumoulin, which can be found at this year’s event at Hall 10.1, stand E11-D10, sugar and chocolate panning in automatic coating pans versus manual ones give better results from many perspectives, such as labour cost, utilities consumption, rework and scrap, hygiene, flexibility, and obviously quality and consistency of finished products.
Capacity is also much larger with batch sizes from 250 to 3000 kg of coated products. Unique to Dumoulin is the possibility to coat and then polish within the same batch, without intermediate handling and curing of the products. Chocolate coating of difficult products such as raisins (oily and irregular surface), corn flakes (flat and light) or jelly centres (soft and flexible) is made easy thanks to the specific design of spray nozzles with atomisation. Another major advantage is the cold air circulation during chocolate panning, saving energy compared to other technologies.
Sugar coating is faster than any other technology thanks to the perforated drum, allowing much higher airflow, and drying in the volume of the batch instead of on the surface.
Latest improvements include a twin chocolate spraying bar allowing use of two different chocolates in same batch and optimised changeover between chocolates. It also has flavour injection systems in-line in chocolate mass, specific procedures for recovery of chocolate from the drum, and atomisation pressure in recipe to handle various chocolates, compounds etc in same machine, and maintenance of the installation monitored from the HMI.
